“Excelso” is a grading term for coffee exported from Colombia, not related to variety or cupping profile. Excelso coffee beans are slightly smaller than the large Supremo coffee beans. Colombian coffee is graded before shipment according to bean size. It is possible that Supremo and Excelso coffee beans can be harvested from the same tree, but they are sorted by its size.

The Swiss Water Process came to life in Switzerland during the 1930s. This process is less invasive to the final coffee and with superior taste to chemical processes. Not only is it certifiable as an organic process, this method really does offer a great tasting alternative.
